Difference between converting color into B&W and shooting B&W photo?

Is there a difference (say in quality or the look of the image) if I shoot in color then convert the image in photoshop to b&w, and just shooting with b&w to begin with? Also, as a bonus, can you give any tips in shooting b&w, ie. iso100? should the be depth of focus with b&w or could it be too blurry?

Quality.

When you start with a full RGB image file, the detail in the resulting images will be much higher if you start with an RGB file.

You can test this by shooting a shot in the monochrome mode and the same one in RGB

The first thing you will notice is there is much less information saved in the monochrome mode.

When you use the saturation tool set to -100 and save the new file under a different name (so you do not overwrite the original file). The next step is to use the level tool and set the black threshold, white threshold and then using the mid-tone adjustment arrow, make slight adjustments until you have what you want.

Save that image and then compare that one with the monochrome file you shot in camera. I am sure that you will see the difference and of course, the image file sizes will be much different as well.

Blur has only to do with camera or subject movement. It is up to you to control that using a tripod and high shutter speeds.

Depth of field will be determined by you. You will have to adjust the lenses aperture and use the DOF preview to see if you are pulling enough depth of field.

For clarity, depth of focus is a term that describes the focus along the focal plane, something the engineers are concerned about when they design lenses and not something over which you no control

Learning to "see" colour scenes in light values that translate into the black and white image is acquired over many years of experience.
